Three French hens… But which breed? According to the BBC, there are four major breeds of French hens: Faverolles, La Fleche, Crevecoeurs and Marans. The most practical breed for winter gastronomie is the favorelle, which is a winter egg-laying machine. For those who are inclined to favor style over utility, the Marans is a groovy bird. Even that perennial epitome of cool, James Bond, couldn’t resist the Marans’ chocolate brown eggs.
